My Favorite -- Baked Vegetables

Maybe there's one person out there who hasn't tried baking vegetables? It's so easy, so healthy, and so delicious.

Drizzle olive oil onto a large baking sheet. Add vegetables of your choice and toss a little to coat with the oil. Sprinkle with sea salt (or regular salt). Sometimes I add garlic powder, sometimes grated Parmesan cheese. Herbs? Bake at 400 degrees for 15 minutes, then turn the vegetables over. Bake for 10-15 minutes longer.
