Another Zucchini Recipe ... and more!

I was ready to pull out my zucchini plants and call it a successful year. But then I saw this recipe that was so simple to make (other than grating zucchini and cheese) and had to try it. It's a keeper! The recipe is from skinny taste.com
I didn't have a mini muffin tin, so I used a regular one and filled the cups half full. The recipe made 8. Be sure to spray the tin with cooking spray and pack down the filling so the muffins come out easily. They remind me of tiny quiches, so light and moist. Of course you could add cooked sausage or bacon too, but then it would not be a "skinny" recipe, would it?

ZUCCHINI TOTS
1 cup zucchini, grated
1 large egg
1/4 medium onion, diced
1/4 cup reduced fat sharp cheddar cheese, grated
1/4 cup seasoned breadcrumbs (I used plain crumbs and added a little Italian seasoning)
salt and pepper to taste
cooking spray

Preheat oven to 400°.  Spray a mini muffin tin with cooking spray.

Grate the zucchini into a clean dish towel. Wring all of the excess water out of the zucchini.* In a medium bowl, combine all of the ingredients and season with salt and pepper to taste.

*What a great tip, especially for all that spinach we've squeezed by hand!
