Simple Sesame Noodles

Every once in a while I post a recipe I love. Today I would like to share a recipe from The Pioneer Woman.
SIMPLE SESAME NOODLES!

This is sooo good by itself. Of course, you can add to it or serve with your favorite BBQ treats. Great for bringing to potlucks too. My personal preference is using angel hair pasta ... and I use only half the box with the recipe.

Quinoa and Black Bean Salad -- Wonderful!!

I copied this recipe from the internet just a few days ago, but now I can't find the website. I think it was on a blog, so that's why I used the Preview feature on my iMac to copy the recipe only. So I am sorry I cannot give credit to that person ... But I will tell you I just made it for the weekend and it is WONDERFUL !!!!!! I couldn't wait for everything to cool before mixing; it was soo good slightly warm. I hope it tastes as good later when it chills! Here it is ... Enjoy!

Quinoa & Black Bean Salad
1 cup washed and drained quinoa. White grain. It also comes in red.
2 cups water
1/4 cup olive oil
juice from 2 limes
1 tsp cumin
1/2 tsp red peper flakes
1 can black beans, rinsed
1 1/2 cups cherry or grape tomatoes, cut in half
5 green onions, finely chopped
1/2 cup corn. Sometimes I use roasted, frozen corn from Trader Joe's.
1/4 cup fresh cilantro finely chopped, a little extra for garnish
Salt and pepper to taste

1) Rinse quinoa and cook according to directions. Let quinoa cool.
2) Whisk together olive oil, lime juice, cumin and red pepper flakes.
3) Combine cool quinoa, beans, tomatoes, corn, and onions in a large bowl.
4) Pour dressing over salad and toss in the cilantro. Season with salt and pepper.
5) Add extra lime or cilantro for pretty garnish if desired.

New Cooking Site!

I'm always googling recipes and trying new dishes. I was so pleased the other day to find this site: http://www.skinnytaste.com/

If you follow Weight Watchers, this site will be helpful in that it lists points. I'm going to try the Buttermilk Dressing recipe today. Yesterday at Costco I bought the big pack of romaine lettuce hearts. I shared half of them; nevertheless that's still a lot of lettuce. Am looking forward to grilling chicken and vegetables and having the salad with home-grown tomatoes and cucumbers. Maybe marinate the tomatoes first with olive oil, balsamic vinegar and fresh basil. Yum. I'll report on the salad dressing. Let me know if you try any of the other recipes. Just reading them is fun (it doesn't take much to entertain me, I guess).

Yesterday I also bought 500 lb. of clay, although a few lbs. belong to other people. I wondered about my tire pressure when all that clay was loaded. The guy said, your back tires look OK. Then I asked myself if I should stop at Costco first or drive straight home. I could see one of my tires exploding in the mid-day heat ... Then I asked myself how many people could fit in my Pathfinder with all the seats it came with and how many pounds did that total. 7 or 8 people weighing 150 each ...  over 1,000 lb.!! So needless to say I stopped worrying and stopped at Costco!
